The three major mushrooms producing countries according to FAO data which are China, the USA, and Netherland account for more than 60 percent of the world production; however, the share of China itself is 46 percent which is about half of the world’s mushroom production.
According to current Indian estimates, the mushroom production in India is about 1 metric ton, which is about 3 percent of the world’s mushroom production.

Export in China accounts for less than 5 percent of its total domestic production and about half of it is to Asian Countries. Considering that 95 percent of mushroom production in China is consumed locally, the consumption per capita is likely to be over 10 kilograms per person per year. This is drastically higher than in the US and many European countries where it is around 3 kilograms per person per year. In India, consumption is miserably low. About 60 to 70 percent of it, India’s per capita consumption is around 30 to 40 grams per person yearly.
World processed canned and dried mushroom export is continuously increasing from 0.049 to 0.683 million tons over the last four decades from 1970 to 2010 as compared to the fresh mushroom export of 0.014 to 0.482 million tons but fluctuations in export are higher in the case of the processed mushroom. In the USA, five decades ago, 75 percent of the mushroom consumption was in the form of canned mushrooms. Today, canned mushroom contributes only 15 percent of total mushroom consumption. The consumption of canned mushrooms is static and that of fresh mushrooms has increased continuously. This clearly shows that consumers’ interest is shifting towards fresh mushroom consumption.
The largest importer of preserved or canned mushrooms is Germany with about 1,05,186 tons in 2007 according to FAO followed by Russian Federation with about 69,726 metric tons, the USA with about 67,058 metric tons, and Japan with about 32,757 metric tons. Most of these supplies are made by China with about 4,05,112 metric tons, Netherland with about 1,15,349 metric tons, Spain with about 20,623 metric tons, France with about 18,496 metric tons and Indonesia with about 18,392 metric tons.
China is the largest producer and consumer of mushrooms in the world with 15,68,523 metric tons production and 17,732 metric tons imports followed by the USA with 3, 59,630 metric tons production and 68,123 metric tons imports and the Netherland with 2,40,000 metric tons production and 7,884 metric tons imports respectively.
The Trade of mushrooms in the European Union is significant as European Union mushroom production is about 27 percent of the world production according to FAO. The Netherlands is the largest producer and consumer, Poland is the largest exporter, the UK is the largest E.U importer, and France, and Spain are also the larger producers as well as consumers.
From the outside, China is the largest exporter of processed mushrooms. Per capita consumption is very high which is about 3.5 kilograms in these countries.
The highest per capita consumption of mushrooms is in Netherland with 11.62 kilograms followed by Ireland with 6.10 kilograms and Belgium with 4.46 kilograms. Per capita consumption of mushrooms in India has increased from 25 grams to 40 grams in the last 10 years.
